Title A name given to the resource Análisis de solubilidad y resistencia del biofilm comestible a base de residuos agroindustriales Subject The topic of the resource Ingeniería en Industrias Alimentarias Description An account of the resource Resumen Los biofilm comestibles se presentan como una oportunidad en el conjunto de estrategias ambientales demandadas por la sociedad, pero este sector aún se encuentra en desarrollo y es importante pasar las barreras que limitan su uso, pues no todos cuenta con las mismas propiedades físicas- mecánicas, como solubilidad y resistencia en agua, permeabilidad, resistencia térmica y transparencia (Pacheco Gina, 2014). El objetivo de este proyecto ha sido evaluar las propiedades físicas – mecánicas (solubilidad y resistencia) del biofilm hecho a base de residuos agroindustriales por medio del análisis experimental, para determinar su aplicación en los diferentes tipos de alimentos. El trabajo de investigación fue de tipo cuantitativo, pues se manipularon variables numéricas para realizar la parte estadística. Contando con una variable independiente (temperatura) y variable dependiente (tiempo de resistencia), teniendo como base el análisis estadístico un análisis de varianza (ANOVA) y de comparación TUKEY, para poder comprobar o refutar la hipótesis. Para llevar a cabo la prueba se elaboró el biofilm, posteriormente se recortaron rectángulos de 2x3 cm aproximadamente, en total 30 muestras, las pruebas se realizaron por triplicado. Se evaluó tomando el tiempo de la solubilidad en agua, primero a temperatura ambiente (10°C, 20°C, 30 °C y 40°C) y después a temperaturas altas (50°C, 60°C, 70°C, 80°C, 90°C y 100°C), todas estas pruebas se llevaron a cabo en un vaso de acero vitrificado con 80 ml de agua destilada. Se observó que las temperaturas 60°C y 70°C están en los grupos E y F, lo que significa que sus diferencias entre las medias que comparten una letra no son estadísticamente significativas. En la gráfica de intervalos de tiempo vs temperatura se observa que hay un momento en que el rango de temperaturas de 50°C a 80°C no tiene diferencia significativa y hay una relación que es entre menos temperatura (temperatura ambiente) aplicada mayor es el tiempo de resistencia.
